For the Love of Food

Alright, so here is the thing.  I have had a love/hate relationship with food for as long as I can remember.

In the past, I have not been your let's eat just one or two Oreos kinda girl.  I am more of your Oops, I just ate a half of package of Oreos..kinda girl.  So typically, I operate in two different modes.  Either, eat everything in sight or eat so little my metabolism simply gives up.  Both, not good options.  So after having Haley, I really wanted to focus on being healthy.  I wanted to model good eating habits for her because otherwise, the example I would be setting would set her up for a long and difficult life.

And just to set the record straight.  I did have that good model growing up.  We only ate great balanced meals.  My parents have some of the most balanced eating habits I have ever witnessed.  They are like veggie eating fools.  So I am not sure where this craziness with food has really come from, because it was NOT how I was raised.

I simply have a cookie monster gene.  Seriously, sweets make me go all wild eyed and crazy.

So I have been going through the slow and painful process of changing my life style.  It hasn't been easy and to be honest it is a constant struggle to stay the course and not go one way or the other.  But I can honestly say I am in a really really good place as of right now.

So I wanted to take this opportunity to share some of the foods I am loving on recently and I don't even have to hate myself for loving them.

Eggs.  We all know that eggs also have a love/hate relationship...with the media.  They are good.  They are bad.  IF you eat them, you will die of an Atkin's style heart attack at age 35 surrounded by 32 cats.  Despite all that, I have learned to love them.  They are low calorie.  HIGH nutrients. And have tons of health benefits.  In fact, they are now considered a SUPERFOOD. Did I mention they were cheap?  The verdict, moderation.  Everything I read says stick to one a day.

Green Peppers.  If you have had the pleasure of being around me, what-so-ever recently, you will know I have a major green pepper habit.  I am addicted.  I pretty much end up eating one of these puppies daily too.  They are easy to cook.  I can pretty much eat it with anything.  Cook it a million different ways.  And I think they are pretty darn tasty.  My favorite way to eat them is to stuff them with chicken and Rotel diced tomatoes.  YUM.




Sweet Potatoes  Now, this is not one that I can do every day.  I usually reach for one of these bad boys when I am craving some carb action.  I've done them mashed with cinnamon & unsweetened applesauce which was pretty good (no sugar or butter).  I often slice them and broil them with just a pinch of sea salt--and then pretend they are french fries.  Mostly, I do them baked potato style with a pinch of cinnamon.


Sugar Free Chocolate Syrup Gosh, I really don't like that I like this one.  I am trying, diligently, to remove the fake processed crap out of my life... artificial sugars included.  But this one, helps keep me sane.  At least it is sweetened with Splenda which is the lesser of the fake sugar evils.  But, it is chocolate syrup, and by nature has a whole list of things I can't pronounce in it .  But here is too baby steps!  Basically, I use the chocolate syrup to make iced coffee.  And it is AMAZING.  (And only 15 calories).  Basically, I brew a cup of coffee (caffeine and all it's glory)..put 2 tablespoons of this crap in it.  Then top it off with about 4oz. of almond milk and ice...lastly, to the blender it goes.  Such a great treat!
You guessed it...Almond Milk Have you seen a cow recently?  They are huge mammals.  And our farmers give our cows a lot of crap to make the even fatter.  I just, for whatever reason, can't believe God intended us to drink milk from a cow.  I do give Haley cow's milk still because doctors for years have recommended whole milk..blah blah blah and I don't want to get too crazy with my ideas and her not get something she needs.  But personally, not a fan of cows milk.  BUT I do know that I need the calcium and such.  So I switched to almond milk.  No big deal.  I love the taste.  It is lower in calories than skim milk.  And helps me get the calcium I need since I don't drink as much cow's milk as the good doc's recommend.

Yup...so there you have it.  That is what has been fueling this body lately.  And I have to say, since I have adapted a more "clean" eating style (minus the whole chocolate syrup thing)  I have been feeling way healthier.  Just better.  Crap food makes me feel like crap.  Trust me, I still want a big bowl of mac and cheese, but I don't even think my digestive system would be down with something like that right now.

Now excuse me, I think I have some Oreos and m&m's hiding somewhere....

Should I Stay or Should I Go

At the time, deciding to leave felt like the most agonizing part of the whole ordeal. In hindsight, a few years of prayer journals were filled with distressing agony over desiring direction and reconciliation.  So much turmoil and emotional pain all the time. If Your Happy and You Know it Clap Your Hands....

Alright y'all, I need to post an actual blog post.  It's been awhile.I guess I have said " writers block".  Everytime I've sat down to blog, I've gotten this nasty attitude, like I just want to rant and complain.  I'm not a fan of giving a bad mood more than it deserves or letting people get on my nerves enough that it bleeds in my blog in the most passive-aggressive way possible.  So I won't go there this time.  Focusing on what I'm thankful for has been such a great practice, and has helped me avoid the above.  So here goes nothing.....I'll update a little bit on everthing I suppose.... Finally, life is beginning to slow down.I am so appreciative of the fact that the moving/settling in process is over ( only to do it all again in T minus 5 months....) In theory, there should be a big hole where our next house will be soon. For some reason I doubt that they will break ground this week, but I would be happy if they did...I'm stressed and ...
